Success! Fig Clafoutis was delicious! Reminded me a little of mum’s Lemon Delicious – a cross between a pudding and sponge. I got my recipe from Taste.com.au (click link to view), but I would make one change for next time. The lemon flavour was a little overpowering — figs are quite subtle — so would halve the grated lemon rind. The recipe recommended using two or four small baking dishes — I used the one big one and it was fine. Just have to make sure you bake it long enough to cook the centre through. I also used about half the raspberries — and frozen ones at that. It was plenty!

I can’t wait to try the traditional Cherry Clafoutis. I can imagine it would be so amazingly good paired with a syrupy sauce made from a cherry juice and brandy reduction and maybe a vanilla custard too!
